Pea & Mint Salad

IngredientsPea + Mint Salad

1 cup frozen peas (defrosted and blanched)

½ cup fresh edamame beans

½ cup fresh snap peas

6 finely sliced fresh radishes

½ cup fresh whole corn kernels

1 chopped or sliced skinless roast chicken breast

Handful of freshly chopped mint leaves

Shaved parmesan to be added  on top

Cayenne pepper for sprinkling on the top

Salad Dressing

2 tbsp honey

½ tbs chili flavoured olive oil or Willow Creek fennel oil (my personal choice)

2 tbsp virgin olive oil

½ tbs sesame oil

Dash soy sauce

Dash apple cider vinegar

2 tsp whole-grain mustard

1 heaped tbs Helmans mayonnaise
